Chive Soft Cheese Chicken with Mushrooms

This juicy and mouthwatering chicken explodes with flavours and melts in your mouth.

Ingredients:
- 350g mushrooms 
- 300g mozzarella shredded cheese 
- 5 chicken breasts 
- Salt 
- Pepper 
- 1 package of philadelphia soft cheese with chive 
- 1 tablespoon of oil 
- Paprika  

Recipe:
Preheat the oven to 180 degrees/Gas mark 4
1. Start by washing and chopping up the mushrooms into small pieces, set the pan with a bit of oil on medium heat and let the mushrooms cook until all the water dissolves from them. 
2. After most of the water dissolves, add salt, pepper and paprika to the mushrooms and carry on cooking until there is no water left. 
3. Wash the chicken breasts and slice each breast half way through to create a pocket where you will put the filling in. 
4. Season the chicken with salt and pepper on each
side. Take the mushrooms off the heat. 
5. Start by spreading philadelphia soft cheese inside the chicken, add about a tablespoon of mushrooms and sprinkle the mozzarella. Repeat with each chicken breast. 
6. I also added a bit of mushrooms and cheese on top of each chicken breast.
7. Place the chicken breasts on a non-stick parchment paper on a tray and pop it in the oven for about 20-35 minutes. Make sure to check from time to time if the chicken is cooked inside.
