Colourful Cous Cous
Quick, healthy and light plus just so delicious
Individual portion
Ingredients:
- 50g Spice Sensation Cous Cous (Ainsley Harriott)
- Half of red, yellow and green peppers
- Couple slices of ham
- 40g Sweetcorn
- 40g Red kidney beans
- Couple of olives
- Spring onion
To make the sauce:
- 100ml Natural yogurt
- Couple drops of lemon
- Salt
- Pepper
- A pinch of paprika
Recipe:
1. Measure out 50g of Cous Cous, place in a bowl and add 120 ml of boiling water. Leave it covered for 5 minutes.
2. Cut up all the vegetables and ham in small cubes.
3. To make the sauce put natural yogurt in a small bowl, add salt, pepper, paprika and couple of drops of lemon to the taste.
4. Combine the vegetables and ham with the cous cous. Drizzle a little bit of sauce on top, top it off with spring onion nd enjoy 😋
+Suitable for vegetarians, just exclude the ham from the ingredients
