Grilled Pork Chops & Vegetables
Delicious and perfect on a nice sunny day
Family meal portion
Ingredients:
- 1kg of Pork
- 1.5kg of Baby Potatoes
- 1 Aubergine
- Frozen or fresh veg mix (carrots and courgette, peppers)
- 1 Red Onion
- 1 Yellow Onion
- Olive Oil
- Salt
- Pepper
- Smoked Paprika
- Oregano
Optional:
- Sweet Chilli Sauce
- BBQ Sauce
Recipe:
Preheat the oven to 180 Degrees C/ Gas Mark 4
1. Wash baby potatoes thoroughly, add salt, pepper, oregano and 1 tablespoon of olive oil. Mix well making sure all the potatoes are covered. Place grease proof parchment paper on a tin and spread the potatoes.
2. Bake the potatoes at 180 degrees C for about 30 minutes, you can tell that they are ready when soft inside but crispy outside.
3.Cut the pork into chops if you have a bigger piece or buy ready chopped pork. Season with salt, pepper and smoked paprika. Leave it on the side whilst you prepare the veg.
4. Cut all the vegetables into slices, season with salt and pepper.
5. Set a grilling pan on medium heat, add a tablespoon of olive oil. Grill the vegetables for 10-15 minutes, flip over to grill both sides.
6. Grill the pork chops until they release from the grill, flip and cook on the other side until ready. ( I have used an indoor grill)
*Drizzle with sweet chilli & BBQ sauce and enjoy*
