Raffaello Cake
Perfect combination of coconut and almonds in a delicious dessert
Ingredients:
- 150g Coconut Flakes
- 100g Soft Butter
- 1-2 packets of Vanilla Pudding Mix
- 600g Petit Beurre Biscuits
- 100g Flaked Almonds
Optional:
- 1 packet of Raffaello for decoration
Recipe:
1. Follow the instructions on the pudding packet mix, put butter into a bowl and start whisking until it becomes fluffy. Let the pudding cool.
2. After the pudding has cooled down, add it to the fluffy butter and mix. Add 100g of flaked almonds to the mixture, mix well.
3. In a 20 x 30cm tin filled with parchment paper, start placing the biscuits first, making sure that there are no spaces in between the biscuits. Add the pudding mixture and spread all over. Repeat this 3 more times. You should have 4 layers of biscuits and pudding cream by now.
4. Sprinkle the coconut flakes on top, covering the whole surface. Optional but if you want decorate with raffaello.
5. Place your cake in the fridge for a couple of hours for the ingredients to combine and the biscuits to soften. I would suggest about 3-4 hours.
