Tomatoe Cream Soup
Easy, light and delicious
Ingredients:
- 2 Cans of chopped tomatoes
- Frozen mix of vegetables (carrots, celery & leek)
- Fresh basil
- Half an onion
- 1 Vegetable stock cube
- 2 Tablespoons of double cream
- Salt
- Pepper
- Paprika
- 1 teaspoon of sugar
- A pinch of cayenne pepper
- Garlic granules
- Herbs
Serve with (optional):
- Croutons or make your own from bread
Recipe:
1. In a pot with 2L of water, add the stock cube and the frozen vegetables. Boil for about 15 minutes until the vegetables soften and the veg stock cube dissolves.
2. Blend the tomatoes in a blender, season with salt, pepper, sugar, paprika, cayenne pepper, garlic, herbs, fresh basil and blend for a moment.
3. Chop the onion into small cubes, add a tablespoon of oil to a frying pan and fry the onion until caramelised and golden brown.
4. Add the tomatoe blend, onion and 2 tablespoons of double cream to the cooking veg mix, cover and let it boil on medium heat for about 20-25 minutes.
5. To make your own croutons, cut up a piece of bread into cubes, add a tablespoon of butter on a grill pan. Grill on medium heat for about a minute and a half on each side until golden brown.
