Chickpea & Green Beans Curry

 

Indian-style chickpea curry 


Ingredients:

- 2 Cans of chickpeas                                                             - 2 Teaspoons of turmeric 

- 100g Frozen peas                                                                 - 2 Teaspoons of paprika 

- 120g Frozen green beans                                                     - 1 Teaspoon of garam masala

- 300ml Coconut milk                                                            - 1 Teaspoon of korma

- 300ml Hot water                                                                  - Salt & Pepper

- 1 Big onion                                                                          - Fresh parsley

- 4 Garlic cloves                                                                     - 1 Tablespoon of ground coriander

- 3 Tablespoons of olive oil

- 1 Vegetable stock cube

- 1 Can of chopped tomatoes 


Recipe:

1. Finely chop the onion and garlic, in a big sauce pan add olive oil, onion, parsley and garlic. Cook for 20 minutes on medium heat or until golden, stirring regularly.

2. Add turmeric, ground coriander, paprika and garam masala. Mix well and cook for 2 minutes. Boil the peas and green beans until done in a separate sauce pan.

3. Pour in a can of chopped tomatoes, 300 ml of boiled water and one vegetable stock cube. Cover and simmer for 5-10 minutes. 

4. Stir in the coconut milk, add salt and pepper to taste. Cover and simmer for 30 minutes on low-medium heat, stir occasionally.

5. After 30 minutes, add chickpeas, green beans and peas to the sauce. Simmer for next 10-15 minutes. Serve with rice or Nan bread.
